Recipe of the Week: Black Bean Salad
This week's recipe highlight is Food Network's Black Bean Salad (by Guy Fieri).This is one of those recipes that is so stinkin' simple, so healthy and so tasty -- it's a no-brainer to keep a bowl of this in the fridge. I like to double (or triple) this recipe and snack on it or use it up in a quick burrito or as a topping for a salad. It also makes the perfect potluck addition since you can whip it up the night before, let it "marry" overnight and savor all those great flavors the next day. It's one of those dishes that gets better the longer it sits. My entire family LOVES this salad... it's that good.
Ingredients
- 2 cans black beans, drained, about 30 ounces
- 1 (15-ounce) can corn, drained (I use fresh when in season)
- 2 Roma tomatoes, diced
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup diced green onions
- 1/4 cup diced pineapple
- 1 tablespoon chopped cilantro leaves
- 1 jalapeno, seeded and minced (I leave this out sometimes)
- 4 tablespoons sherry vinegar (I use red wine vinegar)
- Juice of 1/2 lime
- 3 tablespoons honey
- 1 tablespoons salt
- 1 teaspoon black pepper
- Pinch of ground cumin
Directions
Mix all ingredients in a bowl and refrigerate for 1 hour.

OK, I definitely don't want to start a debate about the flu vaccine (I have my opinions), but I wanted to share with you some tips that are a MUST in keeping healthy this flu season.These all come from Dr. Mercola's article "Do Drug Companies Secretly Favor a World Flu Pandemic?" (Again, not opening up a debate.) I subscribe to his newsletter and have found lots and lots of usual information for taking charge of my family's health.
Dr. Mercola sells many safe, healthy products on his site although I find the articles most interesting. I do own his cookware, though, and have purchased some of the products he sells at different sources for much cheaper.
Anyway, these tips are simple to do but very important in making sure you are building up your immune system.
"Take care of your health to reduce or eliminate your risk of contracting the flu. The key is to keep your immune system strong by following these guidelines:

Optimize your vitamin D levels. Vitamin D deficiency is the likely cause of seasonal flu viruses. Getting an optimal level of vitamin D will help you fight infections of all kinds.

Eliminate sugar and processed foods from your diet. Sugar consumption has an immediate, debilitating effect on your immune system.

Address the stress effectively. If you feel overwhelmed by stress, your body will not have the reserves it needs to fight infection.

Exercise. Your immune system needs good circulation in order to perform at its best for you.

Take a high quality source of animal-based omega 3 fats like Krill Oil.
- Wash your hands. But not with an antibacterial soap. Use a pure, chemical-free soap"

Gone Fishin'
Well, we are (finally) heading out for our much anticipated trip to Wisconsin. Every year we go to visit my dad and step-mom at their cabin in Hayward, spending the entire time relaxing, visiting, fishing... it's heaven.
This year we are staying just shy of 3 weeks but don't worry, I'll continue to post as I have time. Posts may be slightly less frequent but I'll do my best (thanks for your understanding!). I'll still (try to) post the grocery deals, drugstore deals, etc. but since I'll have to grab the ads online and I'll be dealing with a time change, they may come trickling in slower than usual. The only posts I won't be doing are the Weekly Menus because we mainly eat the fish we catch and the vegetables we grow. You can check out all my past menus, though, HERE if you're itching for ideas. ;)
On a personal note, spending the summer fishing with my dad (especially this year) is one of my most treasured memories. This man is incredible! I simply adore him, I admire his strength, and I stand in awe at his faith and perseverance during his 17+year-long battle with cancer. As his illness continues to grow rapidly and his body is put to the test, my dad continues to fight. You would never, ever know he has Stage 3 Prostate & Bladder cancer although it has been a very bumpy road. We, of course, are always concerned for his well-being and he, as usual, does everything to make sure everyone around him is cared for. I truly believe my daughter thinks he is a superhero and there is not one other person on this Earth that makes her heart swell like it does when she sees Grandpa... I know the feeling well. He is an inspiration and has always been my hero. I love you with my entire big girl heart, Dad -- forever & ever & always! We're on our way...
{By the way, my dad is the absolute best fisherman around-- taught me everything I know. :) I'll post some vacation pics when we get back!}

I posted this a long, long time ago but I figured it might be good to re-post since school is just around the corner. Many of these will be educational "refreshers" for your children, which will be handy for reminding them what they learned last year. :)~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Nothing replaces (or is more beneficial) than hands-on, active time with your children. But for those quiet times, or those few minutes needed to unwind, most kids enjoy being given the privilege of "working" at the computer.
