I am all about cooking up healthy dinners for my family, but I enjoy it so much more when it's EASY!  I don't always have a lot of time to prep & prepare dinner so I'll take all the help I can get!

So when Plentiful Pantry contacted me with their "2 to 3 ingredient" meals for the "time challenged" this sounded right up my alley!

Plentiful Pantry, which began in '92, has a variety of "2 to 3 ingredient Soups, Dips, Desserts, Pasta, Pasta Salads, Breads, Sauce Blends, Pizza Kits" priced at an average of $7 each.  Each meal, side or dessert requires just a few additional ingredients and has an average of 6 servings.

They sent on over a Chicken & Dumpling Soup kit, to which I added some milk & water and leftover shredded chicken.  To make it heartier, I also threw in some leftover veggies (peas & carrots).  My daughter ate two helpings!  I was really impressed my how easy it was to make homemade-like Chicken & Dumplings - and I was equally impressed my the amount it made. (I was sure the tiny box wouldn't feed my hungry family, but it did with leftovers to spare.)

We also tried the Handmade Pasta, which cooks up perfectly and includes an adorable tiny bottle of olive oil!  This would be a great gift!  The spaghetti sauce mix would be great in a gift basket, although I like mine a little more "spiced up" so I am a make-my-own kind of girl there.

The No-Bake Key Lime Cheesecake Bars (yum!!) and the super easy-5-minutes-to-prepare Pumpkin Cobbler both make excellent hostess gift or are great to keep on hand when you have last-minute guests stop by!
