What's for Dinner?

Here are a few of our favorite meals... some healthier than others, but all very inexpensive to make.

Try substituting low-fat/fat-free dairy products and opting for meatless meals a few times a week. We almost always (90% of the time) have a salad with our dinner, even if we have a full vegetarian meal, and I rarely serve bread as I've found it to be too filling and not entirely healthy.
TIP: Serve your family an "appetizer" plate of fresh cut veggies to munch on while dinner is cooking. This way they will be sure to get their veggies. :)

NOTE: I haven't tried all the recipes, as I usually end up making my own version with whatever I have on hand. Don't break the bank trying to pick up all the ingredients -- use substitutions.


Meat Entrees:

Chicken Divan (Use low-fat ingredients)
Pecan Crusted Chicken Spinach Salad
BBQ Chicken Salad
Penne Pesto with Sun Dried Tomatoes - Add jarred/homemade pesto, sun-dried tomatoes, toasted pine nuts and diced chicken to al dente penne (omit chicken for a vegetarian approach)
Chicken Marsala
Hamburger Broccoli Pie - Better the second day
Baked Spaghetti - Substitute your own favorite spaghetti sauce recipe -- even better the next day!
Garlic Basil Chicken
Lasagna - Olive Garden Clone
Chicken Parmesan
Baked Salmon
Spinach Bacon Quiche - Try substituting the bacon with some fresh mushrooms
Rosemary Chicken
Sole Parmesan w/ Lemon Caper Sauce - Mix up some spinach orzo for a great side
Chicken Tortilla Soup (w/ salad and cornbread)
Tacos -
Try ground turkey instead and load with fresh tomatoes, shredded cabbage, green onion, and salsa
Stuffed Turkey Burgers
Baked Ravioli or Ziti
Chicken and Dumplings
Ham and Beans
Chicken or Beef Stir-fry
Chicken Kabobs - Add some roasted veggies
Chicken Enchiladas - Stuff some shredded chicken (leftovers work prefectly) and cheese inside tortillas, roll them up, and place in a baking pan. Cover with your favorite enchilada sauce (I like Macayo's green), sprinkle with some more cheese and bake until hot. Very easy meal and even better the second day! TIP: Use the rotisserie chickens from the store to save on time. Shred the meat and mix in some enchilada seasoning. Also try adding a can of diced green chilies to the 'stuffing' mixture.

Vegetarian Entrees:

Vegetable Lasagna - You could definitely do a more homemade twist here. Try adding red peppers, spinach, muchrooms, zucchini, onions, and carrots!
Vegetable Barley Soup
Minestrone Soup - This is Olive Garden's knock-off!
Quinoa and roasted vegetables
Lentil soup and a salad
Stuffed Red Peppers
Stuffed Portabella Mushrooms with Quinoa - Substitute parmesan or mozzarella for the feta since it tends to be cheaper and add some sauteed spinach and squash to your quinoa
Hummus and Veggie Sandwich
Garden Pizza
3 bean chili - I use a recipe that's in my head so you're on your own. :)
Grilled Veggie Sandwich
Vegetable Stir-fry
Eggplant Parmesan
Zucchini and Potato cakes
Black bean tacos and burritos - Fast, filling, and delicious! (Just substitute black beans for the usual ground beef)
Spaghetti Squash with marinara
Portabella and Avocado burger
Penne with Vodka sauce - Classico makes a really good jarred sauce too (add some garlic and parmesan cheese)
Broccoli Alfredo with Fettuccine - This recipe is, in no way, low-fat! Substitute a low-fat alfredo. omit chicken and add broccoli florets and chopped red peppers.
Mac and Cheese w/ Broccoli - Rachael Ray's hit recipe
Veggie burgers - Can make from scratch but Morning Star's Garden Veggie burgers are delish! BBQ black bean salad - Omit the chicken
Vegetarian Omelet - Just add your favorite veggies: spinach, mushrooms, onions, scallions, tomatoes, broccoli
Taco Black Bean Salad - Omit the chicken to make a cheap, filling, vegetarian meal
Goat Cheese and Beet Salad
Moroccan Lentil and Veggie Couscous
Black Bean "Burgers" - Load with veggies for a complete meal
Spinach and Cheese Ravioli - I get the frozen kind at Costco (very good!!).
Stuffed Shells with Marinara - Can buy the frozen stuffed shells for a quick meal
Black Bean Tostadas - Serve with some Spanish Rice
Stuffed Baked Potatoes and a Salad
Vegetable Curry - Serve with quinoa or brown rice
Spinach and Artichoke Calzones - Make a great snack or appetizer too!
Thai Noodles with Vegetables - Add some broccoli, carrots, and leeks to make a bit more filling
Pesto Pasta with Sun dried tomatoes - Al Dente penne mixed with a pesto sauce, toasted pine nuts, and sun dried tomatoes
Vegetable risotto - Add sauteed portabellas, tomatoes, leeks -- I highly recommend starting with Lundberg's risotto mixes.
Soba Stir-fry
Hummus and Grilled Vegetable Wraps
Mushroom Quesadillas - Add some spinach and fresh salsa for an even healthier touch!
