Last week was a total bust for our menu plan...we have been back and forth at the hospital taking care of my Dad so it's really a "Get what you can" meal plan. This week is pretty much the same thing (my poor Dad), but I have enough "sort-of" planned out so that Hubs and my little Peanut aren't in total chaos when I'm gone this week. Anyway, this is a semi-plan -- more like, this is what we have and just eat what sounds good. :)

BREAKFAST:
- Dry cereal and fruit x3
- Hardboiled eggs and Flax toast x2
- Pumpkin pancakes (from freezer)
- Fruit and cottage cheese
- Veggies: Cucumbers, Carrots, Peppers, Cauliflower, Broccoli, Zucchini, Snap Peas
- Fruits: Apples, Oranges, Grapefruit, Bananas, Avocado, Tomatoes
- Cheese Sticks
- Applesauce
- Yogurt
- Crackers and Spinach Dip
- Peanut Butter and Banana Sandwiches
- Morningstar "Chick'n" Nuggets and vegetables
- Black Bean Burritos w/ tomatoes, cheese and avocado
- Veggie Wraps
- Leftovers
- Baked Ground Turkey Spaghetti
- Spinach, Tomato and Garlic Pizza
- BBQ Chicken Quesadillas
- Minestrone Soup
- Grilled Tuna and Cheese with tomato
- 10-Second Mediterranean Salad and Minestrone soup
- Leftover chocolate from Christmas
