{recipe of the week} Pecan Cranberry Spread

This has got to be one of the easiest and tastiest appetizer dips....I first saw the recipe on a box of Town House crackers (you know, the buttery ones?). You do have to make it the night before so all the flavors can marry, but it's the perfect sweet/savory dip.  I figured with all the graduation parties coming up that this would be the perfect time to share this gem!

Ingredients:
  • 8 ounces cream cheese, softened
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/4 cup orange juice concentrate

Directions:

  1. Using an electric mixer, beat at medium speed and cream the cream cheese until soft and fluffy.
  2. Add remaining ingredients and stir to combine.
  3. Cover with plastic wrap and refrigerate until flavors blend, at the very least 60 minutes.
  4. Serve cold with crackers.
