I despise peeling potatoes, so I rarely make mashed potatoes.  Since I got this handy apple/potato peeler it's made the job a bit easier, but whipping up a batch of mashed potatoes doesn't scream "easy" to me.

I was intrigued when MyBlogSpark and Betty Crocker sent me an awesome bamboo bowl, kitchen aids and some of their Boxed Instant Mashed Potatoes to try.  Although intrigued, I was somewhat skeptical that instant potatoes would be tasty.

We tried the Roasted Garlic blend ('cuz you know we love our garlic over here), and I was thrilled with how easy they were!  They also had a good flavor, especially when topped with some butta' and more garlic. ;)  The texture is a wee bit less creamy but they weren't starchy at all, unlike scratch mashed potatoes which can be overwhelmingly filling.
