Recipe of the Week: Any-Filling-Frittata


If you're looking for a super quick meal, for either breakfast or dinner, whipping up a Frittata is a fast way to create a healthy, filling meal. A Frittata is like a crust-less quiche/egg pie and can be tailored to fit even the pickiest eaters -- think of an open-faced omelet.

The best part is that you can throw in whatever veggies your family likes to eat (even some bacon, ham, sausage, etc.) and you can serve with some browned potatoes or sliced tomatoes. Our favorite variety is with spinach, mushrooms and swiss cheese but, really, it's quite delicious with any filling.

Most kids love eating "egg pie" and most adults love the fact that, unlike a quiche, it doesn't have that fattening crust to pack on the calories. I swear, even the beginner cook can make this dish with ease.

Here's a basic recipe for a Yummy Frittata:

Ingredients:
  • 6 eggs, beaten
  • 1-ounce shredded cheese, grated (cheddar, swiss, parm, etc. - whatever you like)
  • 1/2 teaspoon black pepper
  • Pinch salt
  • 1 teaspoon butter
  • Vegeteables or meats of your choice
Directions:
  1. Preheat oven to a low broil setting.
  2. In medium size bowl, using a fork, blend together eggs, cheese, pepper, and salt.
  3. Meanwhile, heat a 12-inch non-stick, oven safe sauté pan over medium high heat. Add butter to pan and melt. (I use a cast iron skillet.) Sauté your veggies and/or meat for 2-3 minutes.
  4. Pour egg mixture into the pan and stir so that the fillings are evenly distributed. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top.
  5. Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Remove from pan and cut into 6 servings. Serve immediately.
Again, this is great for breakfast or even for a cheap, yummy dinner. Serve with sour cream, salsa, potatoes, tomatoes, cornbread, or whatever makes your family smile! :)
