Recipe of the Week: Crockpot Applesauce

When life hands you lemons you make lemonade, right? Well, when apples are .69/lb, you best be makin' some Crockpot Applesauce!!

Mott's little cups of sauce have nothing on this warm, cinnamon-y chunky applesauce that's made fresh in your crockpot. Sure it will take a wee bit longer (4-6 hours) but your house will smell divine and your tastebuds will surely be thanking you.

This Crockpot Applesauce recipe comes from one of my favorite cooking blogs, A Year of Slow Cooking. If you enjoy using a crockpot, check out Stephanie's yummy recipe collection - she's so inventive!

You can easily double (or triple) this recipe or even can some of it. I highly recommend at least doubling it!!

Stephanie's Crockpot Applesauce:

--4 large apples, skinned ,cored, and cut in quarters
--juice from 1 lemon
--1/2 tsp cinnamon (I use a lot more)
--1 tsp vanilla
--1 T brown sugar (I've tried it with agave nectar instead and it's just as good)
--1/4 cup H20

Skin, core, and cut your apples into quarters. Plop the pieces into your crockpot (4qt. or larger). Add the juice from the lemon, and the water. Pour in the vanilla (I used imitation--we were out of the good stuff), and add the cinnamon and brown sugar.

Cover and cook on low for 4-6 hours. When the apples are super tender, mash with a potato masher or large fork.

Eat it as-is (nice and warm) or refrigerate for a little snack later. This is one of our favorite desserts ever! We even top pancakes, ice cream and make mini-apple pies out of it!
