Recipe of the Week: Broccoli Salad (Sweet Tomatoes style)

How many of you go to Costco at lunchtime just to taste-test all of their little samples? Come on, be honest. This weekend Ele and I headed into Costco for a few staples and manage to hit every little sampling stand.

We came upon one such stand, with the most darling lady working behind it, and she tempted us with some beautiful paper cups of broccoli salad. Now, I've had Costco's broccoli salad before but this was Souplantation's (aka Sweet Tomatoes) recipe, also know as Joan's Broccoli Madness Salad.

It was sweet (maybe a little too sweet?), but it was crunchy, tangy, chewy and hit all the right tastebuds. For 2lbs., split up in 2 mixes of 1lb. each, it was $9.99. Seems pricey but the darling lady explained that she just had to sell that last one then she could go home. How could I resist?

In 2 days, a toddler and myself ate through 1 whole pound and we're looking forward to polishing off the another 1lb. when Hubs comes home this week.

Good for us that I found the recipe online!! Now I can make this yummy broccoli salad whenever my little heart desires!

P.S. The cashews are a brilliant addition!

Joan's Broccoli Madness Salad Souplantation aka Sweet Tomatoes 6 - 8 servings

1 bunch uncooked broccoli, cut into florets
1/2 cup crumbled cooked bacon
1/2 cup cashews
1/3 cup raisins
1/4 cup chopped red onion

Dressing

1 cup mayonnaise
1/3 cup sugar (I would use not quite 1/4 c. because it gets really sweet)
2 tabl. apple cider vinegar

Mix the broccoli, bacon, cashews, raisins and onions in a large bowl. In a second bowl, beat dressing ingredients together gently until smooth.

About 10 minutes before serving, toss the salad with the dressing to allow flavors to meld. Serve on chilled salad dishes.
