AGAIN, this week will not be normal (when is it ever "normal," I ask?). We will literally be gone pretty much all day and night almost every day this week! We have a date-night concert, school, a school recital, lots of church activities, time with Dad, time with my brother, time with friends -- it will be a glorious week!!
We did it! We had a successful baking day squeezed into a whole 'lotta chaos last week and have a freezer full of:
Still want to make some Pumpkin Waffles for the freezer if I could only find some time. Those pancakes took so long -- I was a flippin' fool (pun intended).
BREAKFAST:
- Greek Yogurt & Fruit
- Pumpkin Chocolate Chip Muffins and fruit/cottage cheese x2
- Steel-cut Oats w/ flax and applesauce x2
- Pumpkin Whole Wheat Pancakes and eggs x2
- Veggies: Carrots, Cucumbers, Onions, Broccoli, Green Beans (frozen), Peas (frozen), Corn (canned it when it was in season), Kale (from garden)
- Fruits: Bananas, Grapes, Kiwi, Apples, Oranges, Cantaloupe, Strawberries, Pineapple
- Cheese - Tillamook Cheddar, Cream Cheese, String Cheese, Cottage Cheese
- Greek Yogurt
- Whole Wheat Crackers
- Raw Nuts
- Pretzels
- Lunch w/ Dad using gc
- Lunch-on-the-go w/ sandwiches or wraps and fresh veggies x2
- Chicken Salad Sandwiches and veggies
- Leftovers x3
- Italian Sandwiches w/ brother :)
- Skillet Lasagna (compliments of McCormick - I'm a product tester)
- Quick dinner of something before Chris Tomlin concert (yay!)
- Dinner out before Miss E's Easter School Program using Restaurant.com gc
- Mushroom Marsala w/ pasta and salad (didn't make last week)
- Dinner w/ Dan & Amanda (hopefully, :))
- Dinner w/ Dad using gc
