Weekly Menu - Week of 9/27

Breakfast:
  • Orange Juice and oatmeal
  • Pumpkin Pancakes (make extra and freeze)
  • Dry cereal and sliced bananas
  • Hard-boiled egg and fruit kabobs
  • Cinnamon Toast and fruit
  • Bagels, cream cheese and fruit x2
Snacks:
  • Veggies - broc., cauliflower, asparagus, tomatoes, zucchini, peppers
  • Fruits - Pineapple, grapes, raspberries, bananas, applesauce
  • Whole Grain crackers and spinach dip
  • String Cheese w/ fruits or veggies
  • Black Bean Salad
Lunch:
  • Veggie wraps
  • Sandwiches and veggies x2
  • Spinach salad and Kale and veggie soup
  • Leftovers x2
  • Pasta Salad

Dinner:
  • Get togethers (Bringing Salads, pasta, and desserts)
  • Kale and Roasted Veggie Soup (substitute zucchini for butternut), Salad and Cornbread
  • Chicken, Artichoke & Mushroom Pasta w/ Garlic Sauce (& spinach salad)
  • Vegetarian Shephard's Pie ( & spinach salad)
  • Pumpkin Pancakes and Spinach Frittata
  • Veggie Stir Fry with Kashi Pilaf
Desserts:
  • Sweet Pumpkin Dumplings - Can you tell I'm excited about Fall? I had a can of real pumpkin puree that was dying to be eaten this week!
  • Frozen Yogurt
  • Pineapple dipped in dark chocolate - Oh.my.YUM!
